INGREDIENTS

  • 4-6 Boneless chicken breasts or boneless chicken thighs (I used 2 lbs)
  • ¼ cup olive oil
  • ½ cup chicken broth
  • 2 TBSP fresh lemon juice
  • ½ cup capers (rinse and drain juice) - 2.4 oz jar
  • 1 TBSP dried parsley
  • 1 lemon, sliced
  • salt and pepper, optional

INSTRUCTIONS

  1. In a gallon size freezer safe bag combine all ingredients except fresh lemon and chicken broth.
  2. Freeze
  3. When ready to cook thaw in the refrigerator overnight.
  4. Place into a slow cooker and add chicken broth and fresh lemons on top.
  5. Cook on low for 6-8 hours.
  6. Remove lemons and salt and pepper if desired.
